Foodies Pipi & Tuatua Fritters
1 cup self-raising flour
1/4 cup milk
1 teaspoon curry powder
250 gram tuatua/pipi meat, each piece chopped into 3 bits (see tip)
1 small onion, finely diced
1 firm tomato, finely diced
foodies Extra Virgin Olive Oil for cooking
In a bowl, mix flour, eggs, milk and curry powder to a smooth batter. Season.
Add tuatua/pipis, onion and tomato. Mix to combine.
Heat a frying pan or barbecue plate to medium.
Add enough foodies Extra Virgin Olive Oil to shallow-fry fritters. Cook spoonfuls of mixture in batches, flipping halfway through, until golden brown on both sides.
