Foodies Brown Rice Salad

Foodies Brown Rice Salad


1 Cup Brown Rice

¼ Cup Soy Sauce

1 Finely Chopped Red Pepper

3 Finely Chopped Spring Onions

Mixed Nuts – handful


¼ Cup Soy Sauce

¼ Cup foodies Extra Virgin Olive Oil

2 Tablespoons Lemon Juice (if you like – we prefer without)

1 or 2 Cloves of Crushed Garlic

1 Teaspoon Ginger

1 Tablespoon Brown Sugar



Cook Brown Rice in 2 cups of water for 45 minutes (add water if needed)

Let rice cool then mix in Red Pepper, Spring Onions and Soy Sauce.  Mix through dressing adding mixed nuts at the end before serving.
