Sam Heaven's Winning Dish
Sam Heaven from SKYCITY Auckland has won an award in the world skills competition with his salmon dish. This award allows Sam to represent New Zealand in Russia in 2019. World Skills The salmon entrée was the 1st part of the competition and Sam received a gold medal for this. The ingredients used were Petitgrain sous vide @orakingsalmon loin | grilled Piko Piko | Horopito and nori sea salt cured quail egg yolk, shallots, caviar | drift wood Umami gel | foraged sea herbs | fried kawkawa leaf this dish was matched with the perfume; Sephora AQVA pour home
